I just tried using regular kitchen wax paper and that seems to work pretty well.  Doesn't stick to the wood / glue bleed - peels right off.  Doesn't cost me anything. I steal it from the baking drawer.  Thanks for the suggestions everyone.
 
I use Tyvek.  I attached a rod to hold the roll at the end of my 4 x 8' cutting/assembly table.  When I need some cover, I just roll out what I need.  It's very resilient stuff.  ( I use it on jobs for floor protection.  Tough and nearly liquid-proof)  So most times when I'm done finishing or gluing, I can rewind the roll and use the sheets over again and again.

It seems expensive, but not so much.  In my area a 9 x100' roll costs about $100USD.  Now cut the roll into 1/2 or even thirds, whatever your needs, and the price per foot comes to as low as .30 cents per lf.  If one can reuse the same footage a number of times, the total cost is quite low.
