I am planning to build a spice rack and storage area for aluminum foil, plastic wrap etc on the inside of the door of a pantry. The door is a hollow core door. I plan to build narrow shelves to accommodate only small spice bottles and light weight boxes of foil, plastic wrap. I am planning to use 1/2 inch plywood or mdf for the sides and shelves but I would like it to be almost full door length. My question is how to mount it to the door and how much weight would the mounting hold. Any other suggestions on this project would be appreciated.

Four screws on each vertical stile top to bottom with a decent thread pattern should hold as long as you don't over tighten them. Sounds like the rack won't carry that much weight.
You might see how far down from the top the horizontal inner frame comes and see if you could extend the top of the sides up to allow you to screw into solid wood at the top of the door if you can.
Glue could work, but it's more 'permanent' if you ever want to remove the rack you built.
I would suggest ply or even solid wood rather than MDF to give you better rigidity and screw / nail holding ability if you're using 1/2" material.
To make it easy, try gang cutting the sides by laying them back to back and routing 1/8" mortises across both sides at once for the shelves. that will give you insets for the shelves. Glue and brad nail from the sides into the shelves.
For the fronts, consider cutting 1/4" solid wood rather than the ply. Will sand better and is less likely to splinter from taking items in and out of the shelves.

Thank you Neil. That is what I had in mind except I was planning fewer lower shelves with a bigger space to accommodate rolls of aluminum foil, plastic wrap, etc standing on end. I will measure those objects and plan the distance between shelves accordingly.
I wonder if hollow core door structure is similar between manufacturers so that I could plan placement of screws in the wood portion of the structure.

Try a depth sensing stud finder and see if that gives you a clue as to the interior framing width.
I think if you were to drill from the front edge into the side guide rails and use a more aggressive thread on the screw, it will probably hold fine on the back of the door. I debated suggesting pocket hole screws as another idea. If you can get aggressive screws, perhaps.

maybe late in the post, but I had a request to make one for a client & they want to take it with them when they leave in the spring. I am going to try to hang it off the door with wreath hooks, a pair attached to the uprights.

I have considered hanging it with some type of bracket to fasten it at the top of the door so the wreath hook is a good idea. I haven't started it until I decide on the way it will be attached. I am finishing a few other projects, but your ideas are appreciated.
